Anyone have authentic Cajun Cake recipe?

I remember you don't use any liquid in the batter, just crushed pineapples.Anyone have authentic Cajun Cake recipe?

INGREDIENTS


3 cups all-purpose flour


1 1/2 cups white sugar


2 teaspoons baking soda


1/4 teaspoon salt


2 eggs


1 (20 ounce) can crushed pineapple with juice


3/4 cup white sugar


3/4 cup evaporated milk


1/2 pound butter


1 cup chopped pecans


1 1/2 cups flaked coconut


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.


In a large bowl, sift together flour, 1 1/2 cup sugar, salt and baking soda. Add eggs, pineapple and juice. Mix at low speed until well blended.


Pour batter into prepared 9x13 inch pan and bake at 350 degrees F (175 degrees C) for 30 to 35 minutes or until done. Have topping ready when cake is done.


To Make Topping: In a saucepan, combine milk, 3/4 cup sugar and butter. Bring to a boil and cook for 2 minutes, stirring constantly. Add pecans and coconut and combine. Remove from heat.


When cake comes out of the oven, Pour on the topping and carefully spread on while cake is still hot.Anyone have authentic Cajun Cake recipe?

Yield: 1 Servings

Pinch of salt

Icing


1 c Sugar


1 c Pecans


1 Stick of margarine


1 c Coconut


1 sm Can of Pet milk





Mix the cake ingredients together and bake in a 9x13 inch pan. Icing:


Combine sugar, margarine and Pet milk. Boil for 5 minutes. Remove


from heat and stir in pecans and coconut. Pour over cake.





Cajun Cake

2 c. flour

20 oz. can crushed pineapple with juice





Mix all ingredients and pour into a greased 9x13 pan and bake at 350 degrees for 30-35 minutes. (Note: This contains no oil or shortening.) While hot, spread with Cajun Cake Topping.





CAJUN CAKE TOPPING:





1 stick butter


1 sm. can evaporated milk


1 c. sugar


1 c. chopped pecans


1 c. shredded coconut


1 tsp. vanilla





Mix milk, sugar and butter in saucepan. Bring to boil. Simmer 5 minutes, stirring often. Remove from heat. Add other ingredients. Pour immediately on Cajun Cake.
