Where can I find a true authentic Cajun Jumbalaya recipe?

It does not have to be perfect, but I do want it to taste like it came straight from New Orleans.Where can I find a true authentic Cajun Jumbalaya recipe?
Jambalaya, My Way





6 tablespoons butter


1/2 cup chopped green onions


1/2 cup chopped yellow onions


1 large green bell pepper, seeded and julienne


1 cup coarsely chopped celery


1 teaspoon minced garlic


1/2 pound medium shrimp, peeled and deveined


1/2 pound cubed boiled ham


1 (16-ounce) can whole tomatoes, crushed with the can juices


1 cup chicken broth


Salt and cayenne


2 bay leaves


1 cup long-grain rice, uncooked


Hot sauce





Steps:


In a large heavy pot, heat the butter over medium heat. Add the onions, bell peppers, celery and garlic. Saut茅 for about five minutes, or until they are wilted.





Add the shrimp and ham. Cook for two to three minutes, or until the shrimp turn pink. Stir in the tomatoes and chicken broth. Season to taste with salt and cayenne. Add the bay leaves and the rice. Cover and reduce the heat to medium-low. Cook until the rice is tender and all the liquid is absorbed, about 25 minutes. Remove the bay leaves and serve. Pass the hot sauce! Crock-Pot Jambalaya


12 ounces skinless chicken breast cut in 1 inch cubes


1 pound smoked sausage


2 bell peppers chopped


1 onion chopped


2 celery stalks chopped


3 garlic cloves minced


1 can whole tomatoes


鈪?cup tomato paste


1 can beef broth


1 tbsp dried parsley


1 陆 tsp dried basil


陆 tbsp oregano


1 tbsp Tabasco


陆 tbsp salt


1 pound shrimp (optional)


In a crock-pot add all together except shrimp. Cook on high for 4 hours. Add shrimp and cook an additional 30 minutes. Serve over rice or combine with enough rice to the desired consistency.
